Whip-It Up Wednesday: Fish Tacos

I am so excited about this dish. One of my most favorite and it is so simple, delicious and healthy! Unless you're me and you cant stop eating these...

I had my first fish taco in Baja Mexico when I was 15 years old. We would stay at my aunt's house, right on the beach.  Gorgeous! Lined with houses, the beach was so quaint, and behind the houses was a cantina. My cousins and I would ride the four-wheeler to the cantina for lunch where we would enjoy the world's best fish tacos, French fries, and grape juice.

MMM, just thinking about it makes me want to go back to San Felipe!

I began recreating the tacos 15 years later for my familia.

I have a basic recipe, but every time we make these I add a new touch, so I encourage you to take this recipe and run with it. Add your own touch to make a delish fish taco.

Ingredients:

White fish filets ( I have used restaurant grade frozen battered cod filets)

Homemade salsa

Corn Tortillas

Sour Cream

Sriracha

Cilantro

Shredded Cabbage

Diced Cucumber

Lime

Directions:

Cook fish according to directions. I love to bbq a nice piece for tacos sometimes. Shred about 1 cup of green cabbage.  Slice the lime into wedges, dice cucumber and chop the cilantro. Once the fish is ready, place a small piece into a corn tortilla and top with the shredded cabbage, salsa, sour cream, cucumber and whatever else you  love!
