We took this to our neighbors for dinner when they hosted a soup pot luck to welcome in the new year.
Once again Potato, Kale, Sausage Soup did not disappoint. So roll up your shirt sleeves, invite some friends over and enjoy this around the table.
Be sure to serve with a crusty, piping hot loaf of sourdough bread and parmesan shavings to top!
1 large bunch of kale
1 Lb Italian sausage, not in the casing
4 medium Idaho potatoes
2-3 cloves garlic
8 Cups chicken broth
1 Cup heavy cream
Salt and Pepper to taste
Red pepper flakes (optional)
In a large pot cook sausage until it is cooked through. While sausage cooks wash and chop the kale and potatoes into bite size pieces. Remove sausage from pan and let drain on a paper towel. The sausage should have left a nice amount of fat and juices add the minced garlic to the pan followed by the kale and potatoes. Stir often but let the kale wilt for a few minutes. Stir in the sausage. Add the chicken broth. There should be enough liquid to cover the ingredients. I often add water if I want more soup. Bring to a boil. Then reduce heat to low and simmer for 30 minutes- 1 hour. Salt and pepper to taste, add the chili flakes if you want more spice. Add the heavy cream and let simmer until hot and ready to serve.
This soup is delish with parmesan served on top.
*I often double the kale and omit the sausage.
