A Yummy Cookie Dough After School Snack

These yummy bars might just make going back to school worth it!!!!!!!

I have decided that if my kids have to go back to school next week, that we are going to have the BEST DANG back to school week EVER! Each kid is going to be tucked in, prayed up and read to at bedtime. I am going to wake up and get ready before them so that I can help them pick out their outfits and make their beds. I am going to make amazing school lunches where the words turkey and sandwich are not welcome! Everyday, they will come home to a yummy snack, and a walk talk so I can hear all about their day. It is going to be awesome!

Okay, most likely most of these things won't happen, but I will make these No Bake Chocolate Chip Cookie Dough Bars. And they look so yummy, they may just make the first day back to school worth it!

No Bake Chocolate Chip Cookie Dough Bars



Cookie Dough:


1/2 cup softened butter
3/4 cup light brown sugar
1 tsp. vanilla
2 cups flour
1 (14 oz.) can sweetened condensed milk
2 cups mini chocolate chips

Topping:
1 cup creamy peanut butter
2/3 cup milk chocolate chips

Directions:
In a large bowl, mix together butter and light brown sugar until light and fluffy.
Add vanilla extract and beat until combined.
On low speed, alternate mixing in flour and sweetened condensed milk. Mix until combined.
Fold in mini chocolate chips with spatula.
Line 8x8-inch pan with parchment paper.
Flour hands and press the cookie dough into the pan.
Cover the bars with plastic wrap and refrigerate for 3 hours or overnight until firm.

For topping, mix the peanut butter and milk chocolate chips in a microwave-safe bowl and heat until smooth.
Spread the mixture over the cookie dough bars.
Chill the bars for 1 hour or until topping is firm.
