Whip-It Up Wednesday: Citrus Salmon Baked with Kale and Cabbage

My kids love salmon. My hubby invented this marinade years ago, the ingredients may surprise you, but they are a delicious surprise.

We usually bbq the salmon, but in an effort to sneak in veggies at any opportunity, and the fact that it is freezing outside,  I tried a new way of preparing an old family favorite.

This is a before-- going in the oven. You'll be surprised how much the kale cooks down!


Salmon Filets (4-6)

1 bunch kale

1/2 head of red or green cabbage


1 C extra virgin olive oil

1/2 C balsamic vinegar

1/2 tsp cinnamon 

1/2 tsp curry powder

1 Tbs dried onion flakes

3 Tbs Parmesan cheese

Salt and Pepper

Sliced fresh lemon on each filet


Chop the kale and cabbage in to bite size chunks and spread evenly on a  cookie sheet.  Place the filets on top on kale and cabbage. In a bowl mix all the marinade ingridients. Pour over salmon, making sure to coat the kale and cabbage mixture. Place lemon on top on salmon and bake for 30 minutes at 350 degrees.

This is a lot of marinade. You may only need a portion of the mixture. Save for later or make extra.
